The Katz Gluten Free Story

Meet Mrs. Katz, devoted mom of 5, and the dynamic force behind Katz Gluten Free. For fifteen years, Mrs. Katz endured a constant and grueling battle with fatigue, headaches and indigestion. Physicians, nutritionists and alternative health practitioners were baffled by her condition, which was originally diagnosed as ‘Chronic Fatigue Syndrome’, with no apparent cure. Every day presented a new challenge for Mrs. Katz, as she struggled to maintain a healthy lifestyle for herself and her family. As the years progressed, Mrs. Katz’s condition steadily declined and she began developing rheumatoid arthritis. Determined to live a normal life again, she was desperate to find a cure.

And then it happened. It was during a random visit to the supermarket when she came upon an acquaintance who innocently mentioned the words ‘celiac disease’. Enthusiastic, curious, and extremely hopeful, she rushed home and immediately set upon researching this disease. As she researched more and more, her ailments seemed increasingly similar to the common celiac symptoms. She scheduled an appointment with her doctor who, upon thorough testing, confirmed her diagnosis. Based upon her research, she learned that two of her children also suffered from Celiac Disease, an inherited autoimmune disorder that affects the digestive process of the small intestine. At long last there was a name and potential cure for her suffering. I am sure you all remember that initial sensation - that apprehensive and deciding moment of diagnosis; knowing that the road ahead is strewn with difficulties and sacrifices, but full of resolve to do whatever it takes in an attempt to once again lead a perfectly healthy life. Mrs. Katz knew that from now on, she would have to carefully read the labels on every food item that entered her home, and totally transform her cooking habits. It would be far from easy. But like a newly assigned soldier eager to tackle his first mission, Mrs. Katz conscientiously accepted her new dietary responsibilities. Always the culinary connoisseur, she set about her mission of devising recipes and techniques to ensure that her gluten-free diet would maintain the benchmark taste and flavor her family had become accustomed to.

The ensuing months were a culinary adventure in the Katz household; with new recipes created on a weekly basis. And slowly, word spread throughout the community. Calls started coming from friends and family members who knew someone who knew someone who was gluten intolerant. Mrs. Katz graciously accepted each phone call, offering prudent advice and support, and of course her famous recipes. At any time of day or night, Mrs. Katz was available to assist and encourage her fellow Celiac disease sufferers. But even with her tremendous dedication and outreach efforts, she knew she was only able to reach a limited number of people, amongst the approximately 3 million Americans suffering from Celiac disease. She knew it was time to take her efforts and expertise to the next level. And thus Katz Gluten Free was created, out of a simple residential kitchen, with not much more than a home model kitchen mixer… and an unconditional mission of enhancing and improving the quality of life for countless Americans.
