GLUTEN FREE TABBOULEH SALAD GLUTEN FREE TABBOULEH SALAD 1 cup water ½ cup quinoa 1 clove garlic 1 bunch flat leaf Italian parsley 1 small tomato 1 small red onion 1.2 tsp cumin 2 TBS olive oil Salt and pepper Zest of ½ lemon Juice of lemon Make Quinoa: Boil 1 cup water, add ½ cup quinoa, simmer on low 30 minutes Cool Quinoa Add to the Quinoa: Mashed chopped garlic Minced fresh parsley Deseed tomato- diced Minced red onion Cumin lemon juice and zest Oil Mix and serve |
