GLUTEN FREE BREAD RECIPE
I developed this recipe when I worked at an organic food co-op as the baker. I haven't made it in a while. I hope it is useful! GF "white" Bread
dry mix: 1 teaspoon salt 1 Tbsp xantham gum 1/2 cup chick pea flour 2 cups brown rice flour 1 Tbsp instant yeast (sometimes called "rapidrise" for bread machines will work) wet mix: 1 egg 1/3 cup egg whites 1 Tbsp cider vinegar 1/4 cup oil 1/4 cup honey 1 1/2 cup warm milk
yield 2.41 lbs of dough
mix dry and wet separately, mix wet into dry cover and proof until double in size divide into half or thirds depending on the size of you loaf pans I make 1.5 or 2 pound loaves place loaves in to well oiled loaf pans let rise again ( covered) Bake at 375 for about 45 minutes tops should be well golden and a pick inserted should come out clean
I've also make this with out a loaf pan in rounds
